Chef Lyndsey
It is my great pleasure to introduce myself to you as your chef. My name is Lyndsey Mason and I was born and raised in the mountains of Sun Valley, Idaho. I grew up in a family of chefs and restauranteurs. I was raised in the kitchen and began cooking at the age of twelve. Over the years I tested my hand in all aspects of the kitchen from baking to line work before starting our second restaurant in 2009, Enoteca, an Italian wine bar. I settled in as executive chef of our third restaurant Town Square Tavern in 2015.
With a degree in International Studies, outside of cooking, the love of my life has always been travel. Previous adventures to Thailand, Nepal, India, and Europe have inspired my cuisine. I find the food people eat and the traditions surrounding it one of the greatest insights into their culture. At the table, conversations happen, and food, a basic human need, can give us mutual understanding in a world full of divides. Sourcing produce and proteins from local and regional farmers is important to me as a chef. I enjoy visiting local markets, seeing what the area has to offer. I also love putting my own creative spin on new ingredients. I am thrilled to explore the food scene in France and very excited to prepare meals each evening to enrich your dining experience in Chamonix.Chef Lyndsey
